Hello friends!

Gosh it has been such a long time. I think I got use to starting off my blog post with "gosh its been such a long time or sorry I haven't been posting for a while" kinda thing. It's getting old.

Anyways, recently I have been helping the lady in red move into her new fancy condo, such a baller, I know. But I did get a chance to bake some stuff. I will post again soon.

Looking back at these images, they were during moon cake festival! Very nice, had lots of food and fruits!

Later on the same week, Tiffany's dad asked me to bake her meringue cake for her birthday. Of course, I got compensated for my hard work and ingredients. The only thing I did differently for this meringue was adding 2 tablespoons of cocoa powder. I noticed that my oven may be letting a bit of the hot air out, so next time I will bake it a little longer since it was still a bit soft on the inside.

Preivously before the weekend, we had a pot luck in my company and I made sandiwches for everybody!

It contained:
toasted bread
glaric lemon mayo
smoked salmon
salami
romane lettuce
spinch


This was an instant sell out! One thing I didn't like was how I toasted the bread, it just made it more dry and crunchy. Ew.

It was a frigging crazy weekend! Two surprise parties, lots of yelling, ball, working out and of course arguing with the lady in red =\.

Saturday was a birthday surpise for Angel; my church friend. Jackie wanted me to bake a nice cheesecake for his girlfriend and gave me strict instructions to make sure it was good. Oh trust me, it was good. I used Jamie Oliver's reciepe for the cake and it turned out fantastic. Instead of using cream, I used milk this time and it actually wasn't bad at all. The milk made it more creamy in my opinion and gave it a smooth texture. Too bad I didn't get any pictures of people enjoying it but you get the picture.

Vanilla Cheesecake

Oven 350F
11 tablespoons unsalted butter melted
9oz digestive biscuits
1/2 cup superfine sugar
3 tablespoons cornstarch
2lb cream cheese
1/2 cream
2 large eggs
1 vanilla bean or extract
1 zest of lemon
1 zest orange

Okay, how mad are you guys? No seriously. I know I have been so out of the radar but the only excuse I have is, I have been busy. Wait, no, I take that back. I am just so lazy to pick myself up and cook/bake. You caught me and now I owe you guys a few posts. It's always so weird coming back from a long vacation and a period where I haven't post no more. I know I lost most of you guy but thats okay, whenever you need me, I am here.

Anyways through the long weekend, I got a chance to bake a nice cotton soft japanse cheesecake. Please take a look.


Ingredients:

* 250ml milk
* 250 gm cream cheese, cubed and softened at room temperature
* 60 gm butter, softened at room temperature
* 6 egg yolks
* 55 gm cake flour
* 20 gm corn flour
* 1 lemon zest
* 6 egg whites
* 1/4 tsp cream of tartar
* 130 gm caster sugar


for the love of cake


double boil the milk and cream cheese


add egg yolks

add flour, corn starch

beat egg whites, add cream of tar tar, sugar

fold in egg whites

bake with water on a tray

done =)
