It's true when people say Toronto snows when its not suppose to. Today is that day where it is snowing like crazy and I heard its going to turn into freezing rain, ouch. Some exciting news, a part that I was expecting to come in the mail came in yesterday and I am super happy about it! It's such a rare part that I got from ebay for a cheap price! It was 73% off original price!!! OMG. =)

Anyways, yesterday I made Sweet potato & Apple Soup. It was one of the best things I have ever made, it tasted like a soup you would enjoy at a high class restaurant. Heres what's in it:

Sweet potato & apple soup
Golden delicious apples
sweet potatoes
red onion
olive oil
veggie stock
cinnamon
nutmeg
salt
pepper
ginger


Combine those ingredients together and boil until the apples and potatoes are fork tender, then puree the soup and add garnish. Drink immediately! The taste is just amazing, it had a bit of sweet and sour followed by the hint of mixed spices.

Happy early spring? Hm, seems like the weather has been on and off lately with the flash storms and sudden temperture fluctuations. I realized that it has been well over a year since I have started this blog and it has been a really good run so far. I have to admit, I did slack off a couple of times and did nothing but I always kicked myself in the butt to do some baking or cooking.

I remember how it all started, it was a cold winter's night when I ordered that Jamie Oliver book. I was so inspired and motivated to change, I wish I still had that strong red fire today. Not saying the fire is dying Haha.

Anyways, last night I got a chance to bake some awesome classic chocolate chip cookies by Anna Olson. For some reason, I always flock to Anna for all my baking needs. She just has everything I need and plus, shes an awesome baker.

Basic cookie dough
125ml unsalted butter
125ml brown sugar
60ml sugar
1 egg
5ml vanilla extract
310ml all purpose flour
30ml cornstarch
2ml baking soda
2ml salt


Chocolate chip Cookies
250ml chocolate chips




Even though my views for this blog ain't as much as what I had a year and a bit ago, I will still continue what I started and finish strong. =)I was enchanted to meet you...

Today is my co-worker's last day in toronto and she wanted to try my meringue cookies one last time. I always find it refreshing re-visiting my meringue escapades, its such a simple receipe that can be done in minutes!

Heres how it goes:
3 egg whites
175 g sugar
vanilla extract


Baked for 45 minutes at 300F. Let it cool in the oven a bit and wa la. Meringue cookies! =) To me, I feel that 175g of sugar is a bit too much but it goes really well with coffee or a hot beverage of your choice. One thing to keep in mind is the consistency of the "blobs" that you throw down on the baking tray. Make sure that they are equally sized or else you will have some burnt ones. =( Everytime that happens, I get so embarrassed. Oh well, you got to be bold and make mistakes! =)

It's something I will never shake off but I will eventually.

I've had a bad week, well it all depends how you look at it and I feel like I have had a bad week. I feel like I'm lacking inspiration and the will to just seek for new things. I am sure everyone goes through a bad week but I think I reached to a point where I just couldn't handle much of it.

Therefore, I decided to do some baking and made some treats for my fellow peers. The strawberry cupcakes were my first choice and also my first time making it. They were great, tastes like cake and the frosting was such a treat. It had cream cheese, whipping cream, sugar and vanilla extract. But turns out, putting them in the fridge over night kind of harden them a bit. Thus making it not as soft as they should be. I was not 100% pleased.

The ice date cakes was an awesome tea time snack, excellent finger food. It came out nicely, except, believe it or not I still don't have a 8 inch square pan yet. My oven seems to be acting wonky. The bottom was boarder line burnt but was not exactly burnt. Other than that, the cake itself was very sweet and had a lot of spices I enjoy (i.e. cinnamon, all spice and nutmeg). The icing sugar was, well, icing sugar. Not a big fan of it but still did it's job.

Here is the bad news, I just bought a new basketball and the black plastic part of it (where you pump air in) dropped in the ball. FML? Definitely. Pissed and annoyed I am.

Oh well, it all depends how you look at things like I said. It could have been worst.

Its been a long while since I blogged at all and honestly, I feel ashamed. I have been baking and cooking but I just haven't been sharing my experiences with you guys. I left you guys in the dark for a while but here I am, back from the shadows and into the light(I think Im high on something haha). Yesterday was valentines day and it was just an amazing day. I spent it with the special lady and I made a three course meal for her.

I started off with the infamous fifteen christmas salad then filet mignon paired with roasted rosemary potato cubes. For dessert I only had ice cream because my chocolate creme brûlée failed. =(

Well today I made it back up. Here is the Chocolate Creme Brûlée:

5 oz dark chocolate
7 egg yolks
1/4 sugar
2 1/4 cups whipping cream
brown sugar

The rest is up to your imagination, only because I want you guys to support the publishing industry and buy books! I will tell you guys how it tastes tomorrow, since I need it to cool in the fridge.
