It's been way too long since I have been here updating you guys on my latest escapdes. Recently, I have been sick and it's not only effected me but other people has this was well. It's called laziness. Haha, I am quite the comedian when I need to be. Yes, I have been lazy and MIA for a while but I did not forget about this blog. Its been on my mind quite a lot and I find it hard to get back into something once you kinda took a break from. Almost like a every day Monday kinda thing.

Recently, my mother told me that she needs me to bake for her and her church friends once every month. She will pay me in return and on top of that. I get to practice my baking skills. Starting off I baked the chocolate chiffon cake.


Chocolate Chiffon Cake
435 ml cake flour 
250 mlicing sugar 
75ml cocoa powder 
7.5ml baking powder 
1 ml salt 
250ml coffee 
125ml vegetable oil 
5 eggs 
2ml cream of tartar
60ml sugar 

The cake itself turned out looking very nice and appealing but one mistake that I did was, I added all purpose flour and not cake flour. All purpose flour compared to cake flour is actually very different and it needed the cake flour for it to be light and fluffy. The all purpose flour made it a bit tough and did not have that lightness this cake needed. Of course, the old man loved it this way but my mother was not as pleased as I thought she would be. Oh well. =(

Hello

Sigh, Boston lost to Miami Heat and now the series is tired 3-3. I am just not a big Miami fan, so therefore I want Boston to win. Haha. Yes, when I am inspired, I am alive. This is a quote that I will remember for the rest of my life. He came to OCAD one year and I went to see him with a someone I knew. He is such a "stand out fella". Everything he did was just different and so was his look. I remember he wore a pink suit with white glasses. So whack.

Anyways, seems like my basketball team and I still can't shake off the lost on sunday to MCCC. They were such a great team but I know we could beat them. Blahh. Today was our little get together at my coach's new place and I brought cheesecake! To be exact, I brought White Chocolate Raspberry Lime Cheesecake. I had it this time! And it was great! It was very soft and moist, not sure if I prefer the more dense version but this was just right. Each bite had a hint of lime, a chunk of white chocolate and to top it off raspberry.

 Here is how it went down if I can remember it off the top of my head. (Blogging while I'm in bed)

White Chocolate Raspberry Lime Cheesecake
Jamie Oliver's graham crust 
Sour Cream 
Flour 
 2 Packs of cream cheese 
 sugar 
salt
vanilla extract 
 1 egg yolk 
2 whole eggs
lime juice and zest 
500ml raspberry 
 100g white chocolate


That sounds right. But what doesn't seem right was I baked this for an hour and a bit. It was suppose to be only for 40 minutes. I think its time for a new oven. Maybe a Electrolux (sp?)

What's special about this cake, I would say, is basically the fruit and the white chocolate. I think this really makes it extra special in a way that it kinda touches different senses. Nice light summer dessert.

Hello!

Gosh, I am so tired. I slept late last night and it wasn't because of baking. I feel like I can't even type, spell or speak properly. Note to self, no more late nights. I am getting too old for this. Yes, Both of Us is a new hit single by B.O.B. and Taylor Swift, I can't believe they got together to do a song. What a week this has been, first the lost of a playoff game then met up with a stranger for some work and now late night sleeping. Boy, I am on a role aren't I? Haha.

Anyways back on topic, last night I had the urge to bake something really chocolately and sweet. I turned to one of my favourite Anna Olson books, Back to Baking and I picked out this receipe called Fully Loaded Cranberry Coconut Marshmallow Brownies. I know, it sounds like a mouth full! The sad thing is, I was in a rush to get to work this morning and didn't even get a chance to bring some to work and try some myself. Oh well. I'll keep you guys posted.

Here is what you need.

Fully Loaded Cranberry Coconut Marshmallow Brownies
125ml unsalted butter 
90g buttersweet chocolate
 90g unsweetened chocolate 
250ml sugar 
3 eggs at room temp 
5ml vanilla extract 
125ml all purpose flour 
60ml cocoa powder
 2ml salt 
125ml sweetened flaked coconut 
125ml dried cranberries soaked in hot water for 5 minutes 
 500ml mini marshmellows

Anna always has these interesting ways of making different types of brownies and that is why I always run to her when I want a new experience with brownies. And yes, yes I know I have been very unconsistant in posting and spending time in the kitchen but you have to understand that I am only human and I get lazy. =P Not that I don't like spending time with Kitty (My kitchen aid cake stand mixer).

I always keep an open mind and if you don't like what you see then let me know. And I promise I will come back with pictures of the finished product. =)

Hello! :)

What a crazy week it has been here in Toronto, sun, rain and wind! It was insane but I am in tip top shape until I had these amazing cookies that is haha. (Note to self: Go to no frills more often. They had a crazy one dollar sale this past week. It was insane!)

Back on topic, I had the privilege to meet a "celebrity chef" kinda. Her name is Rose Reisman. (For those of you that don't know her, she is one of the assistant creators of the health menus at Pickle Barrel and Glow restaurants). Boy, she was an excellent presenter. She came to my office to promote her new upcoming book; Choose it or Lose it. It sheds light on which fast food items you should choose over which is bad. You would be amazed on how much of a difference one might be. Stay tuned and catch her on BT Canada later this week for more information.

I'll have some exciting new experiences once her book comes in! =)

So with inspiration oozing out of me I decided to shake off the rust on Kitty (my kitchen aid cake stand thingy) and whip up some cookies in celebration of this week. I made Chocolate Chip cookies form the Quinoa book that I oh so love. But this time, I didn't have any quinoa and decided to use all flour.

Here's how it went down. (Message me for the exact amount)  

Quinoa Chocolate Chip Cookies
quinoa flour 
all purpose flour 
baking soda 
white sugar 
brown sugar butter 
2 large eggs 
vanilla extract 
salt 
semi-sweet chocolate chips 

  It was excellent, almost gone within the first couple of minutes. It was chewy just how I like it and to top if off, I had a fresh glass of milk. =)
